Rice Stuffed Roast Masala Chicken
Ingredients
For the Chicken Marinade:
● 1 tsp Chilli powder
● 1 tsp crushed chillies
● 1 tsp paprika powder
● 1 tsp red chilli paste
● 1⁄2 tsp urad
● 1⁄2 tsp white pepper
● 1⁄2 tsp lemon pepper
● 1⁄2 tsp crushed black pepper
● 1 level tsp mustard powder/paste
● 1 tsp chicken spice (optional)
● 2 tbsp lemon juice
● 1 tbsp vinegar
● 2 tsp ginger garlic paste
● 1 tsp garlic paste
● 1 tsp salt
● 2 tbsp oil
● Optional: Peri-Peri masala
Method
1. Marinate the chicken with 3⁄4 of the marinade.
2. Cover the chicken with foil and bake at 200°C for 40 minutes until 3⁄4 cooked.
3. Cook rice until 3⁄4 done and allow it to cool.
4. Add the remaining 1⁄4 of the marinade to the rice and stuff it into the chicken.
5. Return the chicken with the stuffed rice to the oven with foil on and cook until done.
Remove foil and grill.
6. Optional: Roast potatoes alongside the chicken using the leftover marinade.
7. Serve the whole chicken with spiced rice and potatoes on the side.
