Mutton Kalia
Ingredients:
* 1 kg leg of mutton, cut into pieces
* 1.5 teaspoons salt (adjust to taste)
* 1 tablespoon Chohans chili powder
* 1 tablespoon Chohans Kashmiri chili powder
* ½ teaspoon turmeric powder
* 1.5 teaspoons garam masala
* 1.5 teaspoons cumin-coriander powder (dhania jeera)
* 1 teaspoon crushed red chili
* 2 tablespoons ginger-garlic paste
* 1.5 teaspoons cumin seeds
* 2 black cardamom pods
* 4 green cardamom pods
* 5 cloves
* 1 star anise
* 3 cinnamon sticks
* ¾ to 1 cup yogurt
* 5 grated tomatoes
* 1 large onion, sliced and fried in ghee until golden brown
* 2 tablespoons ghee
* 3 potatoes, cut into quarters
* Fresh coriander (dhania) for garnish
Instructions:
* Marinate the Mutton:
* In a large bowl, combine the mutton pieces with salt, chili powders, turmeric powder, garam masala, cumin-coriander powder, crushed red chili, ginger-garlic paste, cumin seeds, black cardamom pods, green cardamom pods, cloves, star anise, and cinnamon sticks.
* Add the yogurt and grated tomatoes and mix well to coat the mutton.
* Cover and marinate for at least 2 hours, or preferably overnight.
* Cook the Mutton:
* Heat the ghee in a large pot over medium heat.
* Add the marinated mutton and the fried onions.
* Stir well to coat the meat with the ghee and spices.
* Cover the pot and cook for 60-75 minutes, or until the mutton is tender and the gravy has thickened.
* Add the potatoes and cook for an additional 15-20 minutes, or until the potatoes are tender.
* Serve:
* Garnish with fresh coriander and serve hot with naan or rice.
