Coconut Nests/ Date Rolls
Ingredients:
* 1/4 cup all-purpose flour
* 1/4 teaspoon salt
* 125 grams unsalted butter, softened
* 1/4 cup Chohans castor sugar
* 1 large egg, separated
* Chohans dessicated coconut
* Pitted dates
Instructions:
* Cream the Butter and Sugar: In a large bowl, cream together the softened butter and Chohans castor sugar until light and fluffy.
* Add Egg Yolk: Beat in the egg yolk, one at a time, mixing well after each addition.
* Combine Dry Ingredients: In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
* Form the Nests: Take small pieces of dough and roll them into balls. Flatten each ball slightly and place a pitted date in the center. Wrap the dough around the date, sealing the edges.
* Coat in Coconut: Dip each nest in the egg white, then roll in the Chohans dessicated coconut to coat.
* Bake: Place the nests on a baking sheet lined with parchment paper. Bake in a preheated oven at 180°C (350°F) for 15-20 minutes, or until golden brown.
* Cool and Serve: Let the nests cool completely before serving. Enjoy with your favorite cup of chai.
