Cajun Skewers
Ingredients:
For the Marinade:
* 4 chicken fillets, cut into thick cubes
* ½ teaspoon salt
* ½ teaspoon Chohans cayenne pepper
* ½ teaspoon Chohans crushed black pepper
* ½ teaspoon Chohans smoked paprika
* ½ teaspoon Chohans garlic powder
* ½ teaspoon Chohans onion powder
* 1 teaspoon Chohans dried parsley
* 1 ½ teaspoons Chohans egg yolk powder
* 3 tablespoons double cream yogurt
* Juice of half a lemon
For the Cajun Spice Mix:
* 1 teaspoon Chohans onion powder
* 2 teaspoons Chohans garlic powder
* 1 tablespoon Chohans smoked paprika
* 1 teaspoon Chohans crushed black pepper
* 1 ¼ teaspoons Chohans dried oregano
* ¾ teaspoon Chohans crushed red chili
* ½ teaspoon Chohans dried thyme
* 2 teaspoons Chohans cayenne pepper
Instructions:
* Marinate the Chicken:
* In a bowl, combine the chicken cubes with the marinade ingredients.
* Mix well to ensure the chicken is evenly coated.
* Marinate for at least an hour, or preferably overnight.
* Prepare the Skewers:
* Thread the marinated chicken cubes onto skewers, alternating with onion slices and bell pepper pieces.
* Grill the Skewers:
* Heat a grill or grill pan over medium-high heat.
* Grill the skewers for 5 minutes on each side, or until the chicken is cooked through.
* Apply the Cajun Spice Mix:
* While the skewers are still hot, sprinkle them with the Cajun spice mix and a pinch of salt.
* Finish in the Oven:
* Transfer the spiced skewers to a baking sheet and place them in a preheated oven at 200°C (400°F) for 10 minutes, or until the chicken is crispy.
