Easy Coconut Cake

Ingredients:
* 2 large eggs
* ¾ cup castor sugar
* ¼ cup vegetable oil
* 2 tablespoons melted butter
* ½ cup milk
* 1 ¼ cups all-purpose flour
* 1 teaspoon baking powder
* ½ teaspoon baking soda
* A pinch of salt
* ½ cup desiccated coconut
* 1 ¼ cups desiccated coconut, toasted


Instructions:
* Prep the Oven: Preheat your oven to 180°C (350°F) and grease and line a baking pan.
* Mix Wet Ingredients: In a large bowl, beat together the eggs and sugar until light and fluffy. Gradually stir in the oil, melted butter, and milk.
* Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
* Combine Wet and Dry: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
* Add Coconut: Stir in the ½ cup of desiccated coconut.
* Bake: Pour the batter into the prepared baking pan and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
* Cool and Frost: Let the cake cool completely before frosting.
* Make the Drizzle: In a small bowl, whisk together ½ cup icing sugar and 1 tablespoon milk to form a smooth drizzle.
* Assemble: Drizzle the cooled cake with the icing and sprinkle with the toasted coconut.
* Serve: Slice and serve with a cup of coffee.
