Chicken and Cheese Parathas
Ingredients:
For the Chicken Filling:
* 4 boneless, skinless chicken breasts, finely cubed
* 1 teaspoon salt
* 1 teaspoon black pepper
* 1 teaspoon sweet smoked paprika
* 1 teaspoon crushed red chili
* 1 teaspoon cayenne pepper
* 1 tablespoon ginger-garlic paste
* 2 tablespoons ghee
For the Parathas:
* All-purpose flour
* Salt
* Ghee
* Boiling water
* Grated mozzarella cheese
Instructions:
* Prepare the Chicken Filling:
* In a skillet, heat the ghee over medium heat.
* Add the chicken cubes and cook until browned.
* Season with salt, black pepper, sweet smoked paprika, crushed red chili, and cayenne pepper.
* Stir in the ginger-garlic paste and cook for a few more minutes until the flavors are well combined.
* Remove from heat and set aside.
* Make the Dough:
* In a large bowl, combine all-purpose flour, salt, and ghee.
* Gradually add boiling water, kneading until a soft dough forms.
* Cover and let it rest for 10 minutes.
* Assemble the Parathas:
* Roll out a portion of the dough into a thin circle.
* Place a spoonful of the chicken filling in the center.
* Top with grated mozzarella cheese.
* Cover with another rolled-out circle of dough and seal the edges.
* Cook the Parathas:
* Heat a tawa or griddle over medium heat.
* Place the paratha on the tawa and cook until golden brown on both sides, brushing with ghee as needed.
* Serve hot with masala chai.
