Easy Peasy Carrot Cake
Ingredients:
For the Cake:
* 1 cup Chohans castor sugar
* 2 large eggs
* ¾ cup vegetable oil
* 1⅛ cups all-purpose flour
* 1 teaspoon salt
* 1 teaspoon Chohans baking soda
* 1 teaspoon Chohans cinnamon powder
* ½ cup water
* ¾ cup chopped pecans or walnuts, or a mix of both
* 2 cups grated carrots
For the Cream Cheese Frosting:
* 230 grams cream cheese, softened
* 2 tablespoons unsalted butter, softened
* 1 cup Chohans icing sugar
Instructions:
* Make the Cake:
* Preheat your oven to 180°C (350°F) and grease and flour a 9x13 inch baking pan.
* In a large bowl, beat together the eggs, sugar, and oil until light and fluffy.
* In a separate bowl, whisk together the flour, salt, baking soda, and cinnamon.
* Gradually add the dry ingredients to the wet ingredients, alternating with the water. Mix until just combined.
* Stir in the grated carrots and chopped nuts.
* Pour the batter into the prepared baking pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
* Let the cake cool completely before frosting.
* Make the Cream Cheese Frosting:
* In a large bowl, beat together the cream cheese and butter until smooth.
* Gradually beat in the icing sugar until the desired consistency is reached.
* Assemble the Cake:
* Frost the cooled cake with the cream cheese frosting.
* Sprinkle with additional chopped nuts.
* Serve:
* Slice and serve with your favorite hot beverage.
