Vegetable Curry With Meat
Ingredients
● 1 kg boney meat
● 3 onions, sliced
● 1 tsp jeera
● 4–6 whole green chillies
● 3⁄4 cup oil
● 2 tbsp ghee
Spice Mix:
● 2 tsp ground garlic
● 2 tsp ginger garlic paste
● 3 tsp dhania jeera powder
● 3 tsp crushed chillies
● 5 tsp Chilli powder
● 2 tsp urad
● 1 tsp red chilli paste
● 2–3 tsp salt
Tomato Mixture:
● 6 plum tomatoes, blended
● 1⁄4 cup tomato purée
Vegetables:
● 4–5 carrots, sliced
● 350g green beans, cut into thirds
● 4–5 baby brinjals, halved
● 6 baby onions, boiled
● 1 red and 1 green pepper, cut into chunks
● 6–8 baby potatoes
Optional Additions:
● 1 can butter beans
● 1 can baked beans
● Fried patha, moothia, or madumbis
Method
1. Fry the onions, jeera, and chillies in oil and ghee until lightly golden.
2. Add meat and the spice mix. Cook for 25 minutes.
3. Add the blended tomatoes, purée, and water. Cook for 15 minutes.
4. Add the vegetables and cook until tender.
5. Stir in the beans or other optional additions. Cook until flavours combine.
