Sugar Beans Curry

Sugar Bean Curry Recipe

Ingredients:

  • 1 cup sugar beans
  • 2 small grated onions
  • 2-3 tablespoons ghee
  • 1/2 teaspoon whole cumin seeds (jeera)
  • 1/2 teaspoon black mustard seeds
  • 1/2 teaspoon ground garlic
  • 2 teaspoons chili powder
  • 1/2 teaspoon turmeric powder (haldi)
  • 1/2 teaspoon coriander powder (dhania)
  • 1 teaspoon salt
  • A few curry leaves
  • 5 tablespoons tomato puree
  • A pinch of sugar

Instructions:

  1. Cook the sugar beans: Bring a pot of water to a boil. Add the sugar beans and cook until tender. If the water becomes discolored, drain and replace with fresh water.
  2. Prepare the chutney base: Heat ghee in a pan over medium heat. Add the cumin seeds and black mustard seeds. Once they begin to sizzle, add the grated onions and cook until they turn pink.
  3. Add spices and aromatics: Stir in the ground garlic, chili powder, turmeric, coriander powder, salt, and curry leaves. Cook for a few seconds until fragrant.
  4. Combine with tomato puree: Add the tomato puree and a pinch of sugar. Cook for a few minutes, stirring occasionally, until the chutney thickens.
  5. Combine with sugar beans: Add the cooked sugar beans to the chutney and simmer together until the flavors meld and the chutney reaches your desired consistency.

Serve: Enjoy your homemade sugar bean chutney as a flavorful condiment with various dishes.
