Sugar Beans Curry
Sugar Bean Curry Recipe
Ingredients:
- 1 cup sugar beans
- 2 small grated onions
- 2-3 tablespoons ghee
- 1/2 teaspoon whole cumin seeds (jeera)
- 1/2 teaspoon black mustard seeds
- 1/2 teaspoon ground garlic
- 2 teaspoons chili powder
- 1/2 teaspoon turmeric powder (haldi)
- 1/2 teaspoon coriander powder (dhania)
- 1 teaspoon salt
- A few curry leaves
- 5 tablespoons tomato puree
- A pinch of sugar
Instructions:
- Cook the sugar beans: Bring a pot of water to a boil. Add the sugar beans and cook until tender. If the water becomes discolored, drain and replace with fresh water.
- Prepare the chutney base: Heat ghee in a pan over medium heat. Add the cumin seeds and black mustard seeds. Once they begin to sizzle, add the grated onions and cook until they turn pink.
- Add spices and aromatics: Stir in the ground garlic, chili powder, turmeric, coriander powder, salt, and curry leaves. Cook for a few seconds until fragrant.
- Combine with tomato puree: Add the tomato puree and a pinch of sugar. Cook for a few minutes, stirring occasionally, until the chutney thickens.
- Combine with sugar beans: Add the cooked sugar beans to the chutney and simmer together until the flavors meld and the chutney reaches your desired consistency.
