Recipe Credit: Fatima Sydow Cooks
Ingredients:
- 2 kg tenderized steak
- 4 tablespoons oil
- 2 bay leaves
- 3 large onions, thinly sliced
- 1 green, 1 red, and 1 yellow pepper, julienned
- 6 cloves garlic, minced
- Salt and pepper, to taste
- 1 tablespoon mustard
- 4 tablespoons apricot chutney
- ¾ cup Worcestershire sauce
- 3 fresh chilies, chopped
- 2 tablespoons paprika
- 1 teaspoon red chili powder
Instructions:
- In a large pot over medium-high heat, add the steak and garlic. Cook for 30 minutes, stirring occasionally.
- Meanwhile, heat the oil in a separate pan over medium heat. Add the onions, bay leaves, and sliced peppers. Sauté until golden and caramelized.
- Transfer the caramelized onions and peppers to the pot with the steak. Add the remaining ingredients and mix well.
- Reduce the heat to medium-low and let the steak simmer for about 90 minutes, or until tender. Stir occasionally, adding ½ cup of water every 30 minutes as needed.
- Once the steak is tender and the sauce has thickened, remove from heat.
- Serve hot with rice and vegetables of your choice.
