Slow Braised Steak

Ingredients:

  • 2 kg tenderized steak
  • 4 tablespoons oil
  • 2 bay leaves
  • 3 large onions, thinly sliced
  • 1 green, 1 red, and 1 yellow pepper, julienned
  • 6 cloves garlic, minced
  • Salt and pepper, to taste
  • 1 tablespoon mustard
  • 4 tablespoons apricot chutney
  • ¾ cup Worcestershire sauce
  • 3 fresh chilies, chopped
  • 2 tablespoons paprika
  • 1 teaspoon red chili powder

Instructions:

  1. In a large pot over medium-high heat, add the steak and garlic. Cook for 30 minutes, stirring occasionally.
  2. Meanwhile, heat the oil in a separate pan over medium heat. Add the onions, bay leaves, and sliced peppers. Sauté until golden and caramelized.
  3. Transfer the caramelized onions and peppers to the pot with the steak. Add the remaining ingredients and mix well.
  4. Reduce the heat to medium-low and let the steak simmer for about 90 minutes, or until tender. Stir occasionally, adding ½ cup of water every 30 minutes as needed.
  5. Once the steak is tender and the sauce has thickened, remove from heat.
  6. Serve hot with rice and vegetables of your choice.
