Chickpea Fatteh with a Twist

Ingredients:

  • 1 can of chickpeas, cooked until soft
  • Fried samoosa pur (pieces)
  • 2 garlic cloves, crushed
  • 4 tablespoons tahini
  • 500g Greek-style yoghurt
  • Juice of 1 small lemon
  • Salt, to taste
  • 1 heaped tablespoon of ghee or butter
  • 1/3 cup pine nuts

Method:

  1. In a bowl, combine the crushed garlic, tahini, yoghurt, lemon juice, and salt. Mix well.
  2. Toast the pine nuts in the ghee or butter until golden brown.
  3. To assemble, layer the samoosa pur pieces, then spread the garlic-yoghurt mixture on top.
  4. Add the cooked chickpeas, followed by the toasted pine nuts with the butter or ghee.
  5. Garnish with additional crushed samoosa pur, a sprinkle of paprika, and parsley.
