Chickpea Fatteh with a Twist
Ingredients:
- 1 can of chickpeas, cooked until soft
- Fried samoosa pur (pieces)
- 2 garlic cloves, crushed
- 4 tablespoons tahini
- 500g Greek-style yoghurt
- Juice of 1 small lemon
- Salt, to taste
- 1 heaped tablespoon of ghee or butter
- 1/3 cup pine nuts
Method:
- In a bowl, combine the crushed garlic, tahini, yoghurt, lemon juice, and salt. Mix well.
- Toast the pine nuts in the ghee or butter until golden brown.
- To assemble, layer the samoosa pur pieces, then spread the garlic-yoghurt mixture on top.
- Add the cooked chickpeas, followed by the toasted pine nuts with the butter or ghee.
- Garnish with additional crushed samoosa pur, a sprinkle of paprika, and parsley.
